What you’ll need

1
100 g pasta (your choice, like spaghetti or penne)
2
1 tablespoon olive oil
3
1 clove garlic, minced
4
100 ml heavy cream
5
75 g mozzarella cheese, cubed
6
Salt, to taste
7
Freshly ground black pepper, to taste
8
Fresh basil leaves, for garnish (optional)

How to make it

1

Boil a pot of salted water and cook the pasta according to the package instructions until al dente. This should take about 8-10 minutes. Once done, reserve a small cup of the pasta water and then drain the pasta.

2

In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, just until fragrant. Be careful not to let it brown!

3

Pour in the heavy cream, stirring it gently into the garlic-infused oil. Let it simmer for a couple of minutes, allowing the cream to thicken slightly.

4

Add the cooked pasta to the skillet, tossing it well in the creamy sauce. If the sauce seems too thick, gradually add a splash of the reserved pasta water until you reach your desired consistency.

5

Gently fold in the cubed mozzarella cheese. Keep stirring until the cheese begins to melt and create that wonderful, gooey texture that makes this dish so irresistible.

6

Season to taste with salt and freshly ground black pepper. Serve hot, garnished with fresh basil leaves if you have them handy.

Chef’s secrets

💡

For added flavor, consider tossing in some cherry tomatoes or spinach just before serving for a splash of color and freshness.

💡

If you love a bit of heat, a pinch of red pepper flakes can elevate the dish beautifully!
