Creamy Mozzarella Pasta

1 | 100 g pasta (your choice, like spaghetti or penne) |
2 | 1 tablespoon olive oil |
3 | 1 clove garlic, minced |
4 | 100 ml heavy cream |
5 | 75 g mozzarella cheese, cubed |
6 | Salt, to taste |
7 | Freshly ground black pepper, to taste |
8 | Fresh basil leaves, for garnish (optional) |
How to make it
Boil a pot of salted water and cook the pasta according to the package instructions until al dente. This should take about 8-10 minutes. Once done, reserve a small cup of the pasta water and then drain the pasta.
In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, just until fragrant. Be careful not to let it brown!
Pour in the heavy cream, stirring it gently into the garlic-infused oil. Let it simmer for a couple of minutes, allowing the cream to thicken slightly.
Add the cooked pasta to the skillet, tossing it well in the creamy sauce. If the sauce seems too thick, gradually add a splash of the reserved pasta water until you reach your desired consistency.
Gently fold in the cubed mozzarella cheese. Keep stirring until the cheese begins to melt and create that wonderful, gooey texture that makes this dish so irresistible.
Season to taste with salt and freshly ground black pepper. Serve hot, garnished with fresh basil leaves if you have them handy.
