Cold Sesame Noodles
(1 Servings)What you’ll need
1 | 4 oz. dry spaghetti or soba noodles |
2 | 2 tbsp. creamy peanut butter |
3 | 1 tbsp. soy sauce |
4 | 1 tbsp. rice vinegar |
5 | 1 tsp. sesame oil |
6 | 1 tsp. honey or maple syrup |
7 | 1 small garlic clove, minced |
8 | 1 green onion, chopped |
9 | 1/4 cup shredded carrots |
10 | 1 tbsp. sesame seeds (optional) |
How to make it
Cook the Noodles: Bring a small pot of salted water to a boil. Add the spaghetti or soba noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. This step keeps your noodles nice and firm!
Make the Sauce: In a mixing bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, and minced garlic until smooth. The aroma of garlic and sesame will fill your kitchen and get your taste buds tingling.
Combine: Add the cooled noodles to the bowl with the sauce and toss until every strand is well coated. This can be a fun and messy step—don’t hold back on getting in there with your hands!
Add the Veggies: Gently fold in the chopped green onion and shredded carrots for a lovely crunch and a burst of color.
Serve: Plate your noodles and sprinkle with sesame seeds if you like. You can also drizzle a bit more sesame oil on top for an extra layer of flavor.
Chef’s secrets
For a bit of heat, consider adding a dash of chili oil or some red pepper flakes to the sauce.
Feel free to add cooked proteins like chicken, tofu, or shrimp to turn this dish into a heartier meal.
