Cheesy Egg and Tomato Toast

2 | 1 slice of bread (about 30g) |
3 | 30g cheese (your choice, but mozzarella or cheddar works great) |
4 | 1 small onion (about 50g), finely chopped |
5 | 1 clove garlic, minced |
6 | 10g fresh parsley, chopped |
7 | 50g tomato sauce (homemade or store-bought) |
8 | Salt and pepper, to taste |
9 | Olive oil, for cooking |
How to make it
Sauté the Aromatics: In a small pan, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook for about 2-3 minutes until they turn translucent. Stir in the minced garlic and cook for another minute until fragrant.
Prepare the Toast: While the onion and garlic are cooking, toast your slice of bread until it’s golden and crispy. This will provide a delightful crunch against the creamy toppings.
Add the Sauce: Once the garlic is fragrant, pour in the tomato sauce, stirring to combine. Let it simmer for a couple of minutes to meld the flavors, then season with salt and pepper.
