Asparagus Pasta Delight
(1 Servings)What you’ll need
1 | 75 g pasta (your choice, like spaghetti or fettuccine) |
2 | 100 g fresh asparagus, trimmed and cut into 3 cm pieces |
3 | 1 clove garlic, minced |
4 | 2 tbsp olive oil |
5 | 1 pinch of salt |
6 | 1 pinch of black pepper |
7 | 10 g grated Parmesan cheese (optional) |
8 | Fresh basil leaves for garnish (optional) |
How to make it
Bring a medium pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. This will give it that perfect chewy texture that pairs beautifully with the crisp asparagus.
In the last 3 minutes of the pasta cooking, add the asparagus to the pot. This will blanch the asparagus, keeping it bright green and tender-crisp.
While the pasta and asparagus are cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to brown it—just enough to infuse the oil with that lovely aroma.
Once the pasta and asparagus are done, drain them and immediately add them to the pan with the garlic oil. Toss everything together gently, letting the oil coat the pasta and asparagus evenly. Season with salt and black pepper to taste.
Serve the dish hot, garnished with a sprinkle of grated Parmesan cheese and fresh basil leaves for an extra layer of flavor.
Chef’s secrets
For a little extra zing, consider adding a squeeze of lemon juice just before serving.
If you prefer a creamier sauce, you can stir in a tablespoon of cream or a splash of pasta cooking water to create a lovely emulsion.
