Indonesian Style Spinach and Leeks Stir-Fry

1 | 200 g fresh spinach, washed and roughly chopped |
2 | 100 g leeks, sliced thinly |
3 | 2 cloves garlic, minced |
4 | 1 red chili, deseeded and finely chopped (adjust to taste) |
5 | 1 tbsp soy sauce |
6 | 1 tbsp vegetable oil |
7 | 1 tsp sesame oil |
8 | Salt and pepper to taste |
How to make it
Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the minced garlic and chopped red chili, stirring quickly to avoid burning. The garlic should become fragrant in about 30 seconds.
Add the sliced leeks to the skillet, sautéing them for about 2-3 minutes until they soften and turn translucent. Their sweet aroma will start to fill the air!
Toss in the chopped spinach, stirring continuously until it wilts down, which should take about 2 minutes. The vibrant green color will brighten your dish beautifully.
Drizzle the soy sauce and sesame oil over the vegetables, then season with salt and pepper to taste. Stir everything together for another minute to ensure the flavors meld perfectly.
Remove from heat, and if desired, serve immediately with a sprinkle of sesame seeds or some extra chili flakes for an added kick.
