Honey Glazed Carrots

1 | 150 g carrots, peeled and cut into sticks or rounds |
2 | 1 tbsp honey (about 15 g) |
3 | 1 tbsp unsalted butter (about 14 g) |
4 | ¼ tsp salt |
5 | ¼ tsp ground black pepper |
6 | 1 tsp fresh thyme leaves (or ½ tsp dried thyme) |
How to make it
In a medium saucepan, bring about 250 ml of water to a boil. Add the carrot sticks and a pinch of salt. Cook for about 5 minutes, just until they begin to soften but still have a bit of bite (al dente). Drain and set aside.
In the same saucepan, melt the butter over medium heat. Once melted, add the honey and stir to combine. The mix will start to bubble and smell heavenly!
Toss in the blanched carrots and sprinkle with the black pepper and thyme. Stir gently to coat the carrots with the honey-butter mixture. Cook for another 5-7 minutes, stirring occasionally, until the carrots are tender and glistening with the glaze.
Taste a carrot to check for seasoning; adjust with a little more salt if needed. Once they’re beautifully caramelized, remove from heat.
Serve warm, garnished with a few extra thyme leaves if desired, and enjoy the delightful contrast of the tender carrots with the sweet, sticky glaze.
