What you’ll need

1
150 g carrots, peeled and cut into sticks or rounds
2
1 tbsp honey (about 15 g)
3
1 tbsp unsalted butter (about 14 g)
4
¼ tsp salt
5
¼ tsp ground black pepper
6
1 tsp fresh thyme leaves (or ½ tsp dried thyme)

How to make it

1

In a medium saucepan, bring about 250 ml of water to a boil. Add the carrot sticks and a pinch of salt. Cook for about 5 minutes, just until they begin to soften but still have a bit of bite (al dente). Drain and set aside.

2

In the same saucepan, melt the butter over medium heat. Once melted, add the honey and stir to combine. The mix will start to bubble and smell heavenly!

3

Toss in the blanched carrots and sprinkle with the black pepper and thyme. Stir gently to coat the carrots with the honey-butter mixture. Cook for another 5-7 minutes, stirring occasionally, until the carrots are tender and glistening with the glaze.

4

Taste a carrot to check for seasoning; adjust with a little more salt if needed. Once they’re beautifully caramelized, remove from heat.

5

Serve warm, garnished with a few extra thyme leaves if desired, and enjoy the delightful contrast of the tender carrots with the sweet, sticky glaze.

Chef’s secrets

💡

For an extra layer of flavor, add a splash of balsamic vinegar to the honey-butter mix while cooking.

💡

If you like a bit of crunch, try roasting the carrots instead of sautéing them for that perfect caramelized exterior.
