Spicy Vegetable Omelette Toast
(1 Servings)What you’ll need
1 | 1 large egg |
2 | 1 clove of garlic, minced |
3 | 1 slice of bread |
4 | 1 small tomato, diced |
5 | 1/4 onion, finely chopped |
6 | 1 small carrot, grated |
7 | 1/2 green chili, finely chopped (adjust to taste) |
8 | 1/4 teaspoon black pepper |
9 | 1/4 teaspoon chili powder |
10 | 1/4 teaspoon pepper powder |
11 | 1 tablespoon rice flour |
12 | 1 tablespoon wheat flour |
13 | 1 tablespoon oil (for frying) |
How to make it
In a mixing bowl, whisk the egg with rice flour, wheat flour, black pepper, chili powder, and pepper powder until well combined. This mix will give your omelette a lovely, fluffy texture!
Heat the oil in a non-stick pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Toss in the chopped onion, grated carrot, diced tomato, and green chili. Sauté for about 3-4 minutes, until the vegetables soften and the onion becomes translucent.
Pour the egg mixture over the sautéed vegetables in the pan, swirling gently to ensure even coverage. Cook for about 3-4 minutes, or until the edges start to set.
Carefully flip the omelette using a spatula and cook for another 2-3 minutes until fully cooked through.
While the omelette is finishing up, toast your slice of bread until golden brown.
Once cooked, slide the omelette onto the toast and serve immediately, garnished with a sprinkle of any leftover chili or pepper for an extra kick.
Chef’s secrets
For a creamier texture, you can add a splash of milk to the egg mixture before whisking.
Feel free to customize the vegetables based on what you have on hand; bell peppers or spinach work wonderfully too!
